Traditionally
the fermentation lasts from 5 to 6 days for the Beaujolais-Villages
and from 10 to 12 for finer wines like Brouilly and Morgon.
Then we proceed with the pressing followed by the tasting of the
first juice aptly called “Paradise”.
The “Beaujolais Nouveau” renowned all over the world
is always released to the market on the third Thursday of November
on all continents.
